It is similar with Orcs & Goblins, a lone Giant in an infantry heavy list will probably not last too long. You need some target saturation. Giants do require some attention so it takes fire away from other parts of your list or they will pay the penalty if they neglect them (i.e. Manglers, Arachnarocks, Trolls etc)

Yeah, and you can also bring units like Wolf Riders and Lone Cowboy Goblin Big Bosses that can quickly put some intense pressure on a cannon crew. (An Ironblaster might be a different matter, but the point remains...) That was always one of the worst things when I was using my Empire and I played an O&G player. They'd always gun straight for my Cannons and a single Cowboy can easily slip through any firing lanes left open. Sure, you can shoot him, but then, that's what he wants you to shoot at isn't it? Besides, he probably has a Charmed Shield too.

Giants are totally fun and totally inefficient. In the 8th ed rules set with step up/supporting attacks and steadfast they really struggle to grind out ranked infantry. They can surprise other monsters but at 200 points a Hydra/Chimera etc almost always wins. That being said headbutting a daemon prince is quite satisfying.
