I have recently been getting a lot out of the 6th edition army books. Many different flavours for some of the armies before the onset of 8th edition. I am interested in how some of the forces changed and adapted between editions. Beasts of Chaos -> Beastmen is one example where the army's playstyle changed enormously. From the same vintage too is the Lustria book, which has a brilliant node campaign which could well be adapted for 8th players. Campaign and narrative gaming/different systems seem to be an under-discussed side of the hobby! I enjoy long and in-depth analysis of army capabilities too. Garagehammer had some great episodes in this mould. In short, dig into the background! There is so much there! Also curious about your podcast - let me know where I can listen in! DISCLAIMER: It may be quite dull...
I find people's thought processes behind unit selection and army list construction quite interesting. Particularly when starting a new army and whether to build to a particular list or whether to get whatever you want and then make some sort of cohesive army.

An interesting topic to me would be more obscure, often missed/misunderstood rules from the main rule book.

I'd be interested in an overview of the campaign systems GW has published for Fantasy. Personally this would include stuff from older editions but just 8th content would still probably cover a lot of ground.

Another thought - you could have a regular segment where you interview a player about their army, explain a little about how they built and conceived it, painting/basing details, why they made certain composition choices, the fluff behind it, and how they like to use elements of it on the table. 'Explain Your Army', or something like that!
