I know the answer is "there can never be enough". But with how viable zombie tarpits are and the ability to summmon and increase their sizes, what is a relatively safe amount to have?

Depends on your game size, but it's rare to field a unit of less than 30. I find anything more than 50 to be unwieldy to deploy. You want maybe 20 spare for summoning unless you have a Master Necromancer and your focus is on summoning over combat characters.
100 in horde formation looks the best but I've never had that many myself.

I usually play 3K. I have two blocks of 50 and another 50 for raising.

TheREALricksalamone once brought 300 zombies to a tournament. It was not a highly competitive list but looked awesome. There were not any identical models among the 300. I believe it was 3 units at 100 each.

Just had a looks at TheREALricksalamone's painting thread ( Rich's Undead) and that is a great army. I love the conversions for the zombies. I can see how it would allow you to use any base model as a starting point. p.s. sorry haven't figured out how to hyperlink yet (Fixed it - KevinC).

I’ve always been a fan of not running any zombies (and actually don’t own any, just a bucket load of skeletons). I could see an argument for being smaller units of 20-30 and then just boosting them up.

Something about drowning people in crap troops is really appealing
