Trying something a little different for me.
I normally go pretty much all out cavalry and each unit then gets a damsel. I’m trying to reduce my hero cost (sort of) so I can take more bodies in the army.

Toying with the idea of 40/20 and not 30/30 for the men at arms for watch tower games - yes we still play watch tower. Rarely but it happens. 😁

I like this list. It looks very similar to the ones I tend to play in 8th. My 6th edition armies are almost always all cavalry. I think the biggest problem you might have is how you play your knight units. If your plan is to divide then with M@A support, just make sure you’re not left taking on big units alone. A stubborn/steadfast unit of tough infantry (especially with GW) will wear your Core Knights down quickly.
With 8th edition, I find a combined charge of two Lance formations are a good counter to but infantry blocks, if you’re not fighting stubborn. You’ll have 5-6 ranks to combat enemy steadfast going in with just knights.
Those Yeomen will be your best friends to help make sure you can charge when and where you want to. They make great charge blockers for KE impetuousness tests too.
Obviously every battle field is different. But I’ve had success with heavy cavalry on the flank. Brets are so fast you can usually out maneuver most infantry bases armies. For example, KE on the extreme flank, next to KOTR and then M@A and bowmen and trebs on the opposite flank. With PK and yeomen disperses as needed to redirect and delay. Tactic is basically just close the door. Bring your flanks in while your missile troops soften them up. The KE have the longest to go and will be less like to be kited away.
That being said, this tactic works better with a solid unit of M@A in the middle. I’d consider trying a Damsel with then Prayer Icon or Lore of Life (Earthblood) in a unit of 50 M@A.
You’ll lose your smaller unit for Watchtower, but Archers also make a viable unit for that. You really only need 11 models to guarantee you won’t be wiped out in the first round of combat. Even if you lose (which Bret infantry generally do) your general and BSB should be nearby for rerollable steadfast Ld 9. Then on your turn have your remaining peasant(s) run out to die gloriously for the Lady while your Earthblood/Blessed M@A move in to hold.
An idea I’ve toyed with also are units of 30 bowmen. They’re relatively cheap and can generally be left to their own devices. I found units of 20 can still panic with relatively ease by combined shooting/magic without a knight nearby. Plus a horde of bowmen is harder to panic, has 30 shots, behind a fence (-1 to hit) and can give a lot of opposing generals pause.
