I’ve often looked at my individual armies and thought about what I needed to get next but I recently took stock of every army I own (10 at present) and tried to meticulously work out what I needed to get, to ‘complete’* them, where I’d source the models and how much it would cost me if they were all ‘shop’ bought.
I’m just curious if anyone else has gone to such length or if it’s a case of doing one army at a time (planning the full army) or knowing you will pick up xx unit/models for an army first and then more later (almost a tale of 4 gamers route) or another way of doing things?
*by complete (and for me), I mean having pretty much everything you’d want to cover all the options you would want to field in a normal 2.5k game. For some armies this might mean having multiples of the same unit, in others it might be just having most army options (but not necessarily all - I have no interest in picking up any standard ungors for my Beastmen, as I can’t see myself ever running them, though I will get a few more raiders).

Neat topic. I don't plan things out meticulously. I do have a rough master list of 'wants' for all armies and then whenever I see something for a good price I might go for it. As most of us, I have a veritable gray mountain for picking stuff to paint from so, not finding/buying anything for a while won't stop the hobbying.
For me there are the 'big three' Empire, AllChaos and (recently for me) Undead which will never be complete and I will add to them until my eyes fade or hands turn into rheumatic claws. For the other armies I work towards having 2500pts (plus maybe a bit of sideboard). Eventually I want to end up with all factions (except possibly High Elves as I can't paint white and O&G as I don't like the models though they are fun to play). So far, this has worked reasonably well for Dwarfs and DoW, not so much for Ogres where I am north of 3500pts now and I still want to add a stonehorn.
As I build up a new army I do try and make a 1k army. Paint that up first and then go in chunks of ~500pts. I suppose that is the Tale of X gamer style. But I will switch between armies depending on what tickles my fancy.

So I’ve had various armies over the years and until just recently I never thought I’d “Finished” any.
When 8th finished I’d sold my, Empire, my wood elves and Orcs and Goblins but still had my Dwarves, Tomb Kings and Brets.
Now this may sound a bit stupid but there’s a logic to it. I didn’t want to carry all sorts of boxes to the club and equally I didn’t want to have to sort my figures before I got there so I’ve limited my collections to pretty much what I can comfortably carry.
My Bret army is in two large carry cases and is is basically in 16 trays. I don’t have and questing knights or grail reliquae but without magic it’s sitting at just over 7000 points. More importantly every single space in the carry case now has a model in it, every single model is painted. I consider this done.
Recently I started up another wood elf army and a vampire count army. I’d had a lot of previous models, just lacked skeletons and zombies. So I sat down over the past few months and added 160 skeletons and 100 zombies to my army.
These now live (no pun intended) in plastic boxes, which in turn fit in a rather large tool box. Without lords and heroes this is 4600 points - it’s fully painted and the tool box is full. I’m not saying it’s the best army but it’s got the models in it I want to use. I’ve a TK army so my VC has a lot of ethereal stuff in it, I have TG so didn’t want GG if you see what I mean. Anyway, this army is now done 😁
I still have other armies to do and I’ve just added a few lizards to my existing army, as soon as there are done I’ll have two boxes full. Again that’ll be fully painted and done 👍🏻👍🏻 Over 6500 points.
I think I need to complete the lizards first then work on my other three before any other projects.

I don't have anything that organised, mainly because the cost of what I still want would frighten me. I do have an organised "wishlist" of stuff I want to get, but that only includes what is currently available new - not the various OOP stuff that I need to go down the ebay route for (or futilely hope for a GW Made to Order round). However, I do "know" what units/models want, and could easily write a complete list for all my armies.
I'm in the process of trying to collect almost every WFB army, though TKs are just a small part of my "Undead Legions", and Chaos Daemons and Chaos Dwarves likewise within my overall Chaos army. I had originally intended to get sizeable forces of each, with full sized units, and as many options as possible - but have moderated my ambitions recently. I just don't play enough games to justify having say 40 Bestigors, when I'm not sure if/when I'll ever field that unit.
So for now my focus is on the modelling rather than gaming side of things. More reasonable sized units (~20 models) that I might actually paint one day, and buying the models I like the look of (whether GW or otherwise) rather than focusing on what I need to win games. In particular at the moment I'm picking up models (especially plastic units) that I'm worried GW may drop before I have the chance to get them. There are exceptions for my two main armies (Dark Elves, Vampire Counts/Undead Legions) - you can never have enough zombies, and you can never have enough pointy elves. Plus no army will ever be complete if more good looking models are being brought out that could fit in it.
