Hi guys! I'm looking to get back into 8th when I get back to my home country, and have a half assembled empire army in a box. I haven't played 8th for 10 years (played 40k though). And when I did it was WoC.
I'm building a list with what I have:
General/captain (Blackstone frotress rogue trader) Wizard Master Engineer 3 cannons 1mortar 1 HBVG 6 DemiG knights 60 infantry (sword/halberd/spear/GW) 20 handgunners 6 pistoliers
I really like Nuln.
My friend's have always beaten my WoC, so I'm not the best player. They have High Elves and Dwarves/WoC
This is my scratch together list, let me know what you think!

A good list to start. Personally, too many cannons, and a lvl 2 wizard against WOC or high elves will be an uphill battle. My lord and hero choices are simple and consistent. Lvl 4 wizard One bsb is armor of destiny for protection 1-2 warrior priests with heavy armor and shield one mounted. On a 2000 point army that's bare bones.

conventional wisdom: make the halberdiers one unit of 40 with full command include a Lv4 of Light as Boda says spiff up the General with some protective gear split up the demigryphs into 2x3 (with musicians if your personal wysiwyg allows) you can drop a pistolier and a cannon (also helps with keeping your friends)
if you do expand your army, I'd say a BSB would be the highest priority. knights next, a small unit of five or six works wonders. at that point drop the mortar and spearmen.

Welcome! Your list is a bit constricted by the models you have. Here are some possible tweaks: - The General of the Empire is a subpar choice. As boda317 suggest, you can better use him as a BSB, equipped for survival (maximum AS and some form of WS). - And as@boda317 suggests, I would take a lvl4 Wizard, but with a Dispel Scroll and the Talisman of Preservation. - In 8th edition, CC is often about grinding: state troop units of 20 is far too few. Consider one unit of 30 (or even 40 Halberdiers). - Unfortunately, the Mortar is now almost useless, except against very low T armies. You can drop it, if you need extra points. - It is better to have two units of 3 DGK, than one of six. In one rank, they are far too unwieldy, and in two ranks, you lose the killing power of the mounts. I would not take a standard bearer, because if the unit breaks, he is an unnecessary extra casualty. - If you can spare the points (see Mortar), give the Pistoliers a champion with a brace of pistols. - The Master Engineer definitely must be attached to the HBVG.

Others here have provided great advice! I will only add that 3 cannons is too much at 2k. You might even prevent others from wanting to play against you!
I think 2 is fine, and still fits the nuln theme.

I think drop a cannon (you'll still have 4 artillery) and get a bsb.
If you want to keep the same list...you have 14 spare points so add a champ to one of the melee units or give one of the heroes a magic item boost.

As a VC player mainly I would play against this list anytime . Here is my POV on what I would think looking at this across the table. No lvl 4 and only a single lvl 2 means I should win the magic phase. No warrior priests or arch lector is great. They have some of the most potent bound spells in the game and essentially can "force" one whenever they want with no downside. Decent amount of artillery but I should weather it as well as some juicy points when Fell Bats/Vargheists/Varghulf/Hexwraiths etc. get there. Only one offensive unit to concern myself with. The 20 man units just won't output enough wounds to matter.
