To me it sounds like your opponent just needs to tweak his list and his tactics.
MR is needed against the elves, he should bring an obsidian [something] for his bigger units to help keep them alive. Handy for plague too.
Agree about the Fellblade for the phoenix. No armor save AND reroll ward saves? And D6 wounds? It's just a bummer that the phoenix gives ASL as it gives it a chance to kill the owner of the fellblade before he strikes.
Putting the RO's in charge range of the phoenix was a blunder on his part. A failed frenzy though is just bad luck. being in range of the bsb helps here though.
Ideally with the phoenix having ground movement only he should have hit it with a block of slaves and just tied it up all game. I'd gladly use 50 slaves (100 points) to tie up a phoenix. This also allows for a doomwheel to maneuver in for a flank charge/driveby lightning attack.
dreaded 13th is the best response for phoenix guard. enjoy NOT having a save against those wounds.
Where were his poison wind mortars? They're a hard counter to cavalry and with being able to use their parent units LoS for shooting they can be safely hidden from high elf shooting. Again, slaves FTW. You can fire those mortars into combat at the knights who are tarpitted by slaves. Also the knights were a better target for the hellpit than the phoenix guard. It was either good play/deployment on your part or poor target choice/deployment on his part that saw it fighting the unit most resilient to it's attacks.
WoC and High Elves are both great books. The armies just play differently.
