I know this thread is old but I just read it for the first time as I was inactive on here for a long while but have been perusing threads again. It has lots of 500 point lists so I decided it would be worth while to sticky it.

Dogs of War (500 points) Warhammer armies project 8th book
Paymaster (full plate armour, charmed shield) 54 points
25 Pikemen 125 points 10 crossbowmen 80 points 5 Stradiots with bows & musician 75 points
15 Paymaster's Bodyguard 165 points
No magic, but you get a decent amount of iconic DOW units. The bodyguard will be the hammer and the pikes the anvil, crossbows can try to pick off chaff and you have your own chaff with the stradiots. Could switch out the stradiot musician for a champion in the bodyguard unit to accept any challenges

Having read this again, and reading my initial comment this has turned into a mini list thread.
I’d have to add that some armies - such as Bretonnia which have compulsory choices will struggle at some points but if it’s a newer player you can warp the selection process to allow an educational game. The ideal situation would be to have two opposing armies that are completely diverse to one an other.
The armies should follow where possible a few simple rules.
General - doesn’t have to be all singing and dancing though. Wizard - ideally level 2 so that they can get full use of the potential 12 power dice - or have 1 spell and the ruby ring (you’ll also show how bound spells work) Core units - something in skirmish formation A small fully ranked unit Some missile fire weapons - if say its empire then bows and crossbows to show move or fire weapons. Special / rare units but as a minimum, sure take a warmachine or something unique but you’re really looking at the mechanics of the game and getting the basics of your army out to show your student the diversity of the rules.

Well in that case here's a starter list for each of a couple of my own homebrew army lists: Swarms of the Hive Mind (500 points): Soldier Prime with Deathspitter and Chameleonic Mutations - 175 points 15 Hormagaunts with Toxin Sacs and Firstspawn - 130 points 15 Termagants with Fleshborers and Firstspawn - 100 points 2 Zoanthropes with Neurothrope - 90 points Total: 495 points Albion (500 points): Level 1 Druid with Woad Paint and Talisman of Protection, using the Lore of Life - 125 points 3 Albion Chariots with Musician, Standard Bearer and Chariot Master - 150 points 14 Albion Warriors with Light Armour, Woad Paint, Spears, Musician, Standard Bearer and War Leader - 170 points 10 Tribesmen - 50 points Total: 495 points Have a gander at my new Custom Rules page if you want to see these full army lists (see my signature). Both these armies are attempts to keep things thematic and fun for the armies involved, the Hive Mind list features some Hormagaunt and Termagant chaff, the former of which has Poisoned Attacks to deal with lightly armoured foes while the latter provides some missile support, while the Zoanthropes blast the enemy with Hive Mind powers and the Prime can protect them should they become engaged in combat. Both of these also provide a decent Synapse range to keep the Hormagaunts and Termagants in line and make sure they don't revert to instinctive behaviour. The Albion list is more defensive with a Druid using Life Magic to provide some defensive buffs or even resurrect fallen models if the player rolls well, some Warriors to protect him, all of whom can attack with their spears and have a 5+ Ward Save even before magic, and some Chariots to act as a hammer when the Warriors have bogged down a key enemy. There are also some Tribesmen to pepper the enemy with javelins and just make a general nuisance of themselves.

I'm considering just getting back into WH after a long hiatus, saw this thread and thought of these lists:
High Elves 500
Mage - 120 Lv 2 High Magic
5 Silver Helms - 125 Musician, Shields
10 Phoenix Guard - 185 Full Command, Gleaming Pennant
Repeater Bolt Thrower - 70
Warriors of Chaos 500
Chaos Sorcerer - 115 Enchanted Shield, Lv 1 Fire
10 Chaos Warriors - 230 Full Command, Halberds, Shields, Mark of Nurgle
Chaos Chariot - 125 Mark of Nurgle
5 Warhounds - 30
They seem pretty well balanced against each other. Elves have some good shooting and better magic but the Warriors will dominate combat and boosted Fireball is good.
