I’m quite new to WFB again after more than a decade away. I have a question regarding black orcs and their special rule “armed to da teef”.
It says “at the start of each combat they can choose to fight....”
Example: Black Orcs charge a unit of grave guards and selects 2HW in the subsequent combat phase. In the following combat phase, in vampire counts turn, are they allowed to switch to GW or does it mean that they then have to stick with 2HW until that combat is completely finished?
So are black orcs only allowed to select weaponry once or are they allowed to switch in each combat phase?

They can switch at the beginning of each round of CC. So, if you want to swap from AHW to GW, two rounds in, that's fine.

I thought it was the other way around - a "combat" refers to the ongoing rounds of close combat between two or more units, and therefore you can only change weaponry once the Black Orcs have been out of close combat.

Sedge is correct. "Armed to da teef" first of all specifies which weapons Black Orcs actually have, since it is not stated as such in the equipment section of their army list entry. There it just says "a huge array of weapons," which is not defined here or anywhere else. Secondly, it allows them to switch to HW & Shield, even though they have special weapons, which you normally cannot do.
