What happens when a flame template from Skaven is fired into close combat, are only the models that are hit, hit? Is it divided, if so how?
If a single monster is fighting a unit and it is the only one hit that happens? Or if i hit it and 10 of my guys does he take 5 hits? Lots of questions, how you play templates that wander?

BRB p 9: "To work out which models are hit, you normally need to hold the template over an enemy unit or a particular point on the battlefield, and then look underneath to see which models' bases lie partially or completely underneath the template.
Normally, any model that is fully or even partially underneath the template is hit automatically with the effect described in the special rules for the attack. Some models, such as characters tiding chariots and monsters, might have several different locations that can normally be hit separately - in these cases a template is assumed to hit all the locations on the Model. Remember that a model's base is Counted as being part of the model itself, so all a template has to do to cause a hit on all the Model's locations is to touch its base."
So yes, only the models that are underneath the template are hit. If a single monster is the only one underneath, then it receives a single hit - unless specifically stated otherwise. If it was a ridden monster, both rider and mount would be hit. If the flame template covers the monster and 10 of your guys, the monster and 10 of your guys are hit.

I have a quick question which is probably me just being simple. When a ridden monster or chariot is hit by a Doom Diver, would each under the "template" receive D6 hits or would the D6 be randomised between them?

I am afraid both receive D6 hits.

Lots of questions, how you play templates that wander? I presume you mean scatter. Those rules can also be found on BRB p. 9. Basically, you first roll the scatter die. If a Hit is rolled, the template is not moved. Otherwise, the scatter die will determine the direction. You then roll one or more dice (depending on the rule) to determine the distance, and move the template that distance in the direction detrmined by the scatter die. Note that for the round templates you always use the central hole for measurements.

While this is true, the most important part is actually in the Skaven FAQ which removes the randomization of hits when firing into combats with Slaves. Before that FAQ, it was a very good idea to charge monsters with Slaves as you'd more often than not end up applying more hits to the Monster than it should receive. On the flip side, it makes non-template shots into combats more effective.

Not quite. This was already the case for Slaves & templates in the 7th edition.
From the 7th edition WARHAMMER ARMIES SKAVEN – ERRATA AND FAQs p.7: Q. If a template weapon fires into combat using the Skavenslaves’ Expendable rule, how are hits distributed? A. In this case, ignore the randomisation roll and simply hit all models touched by the template.

This is one of the things that gets me about 8th... the BRB describes combat as a swirling melee where combatants form chaotic little brawls, jostle for position and are in constant motion... hence the rules for randomizing shooting, and up to here nothing wrong... problem is as soon as a template is dropped everyone hurries to line up as if posing for a selfie.

Well, templates are supposed to have an area effect which is more difficult to dodge. And ultimately, fluff can have only little bearing on the rules.

I get it, but it is still grating to see them use a fluff reason to justify randomizing shooting and then just drop it entirely for something else. I wonder how broken it would be to allow templates to function the same way?
