So large targets no longer grant a +1 to hit for shooting, but does the rule allow for a second rank to fire at them? "a model can draw a line of sight to a model with this special rule over or through other models," I don't think so, but there might be an argument for it.
Large Target
Monstrous creatures tower above the battlefield, visible to all for leagues around. Enemy models never suffer To Hit modifiers for full or partial cover when shooting at models with this special rule. In addition, a model can draw a line of sight
to a model with this special rule over or through other models, and vice versa.

I'd interpret the "over or through other models" part as referring to models in other units, not models in the same unit. But I do see your perspective.

I may just be a super literal person, but until I see the FAQ updating it, I would say that (when firing at a model with the Large Target special rule) up to your entire unit could shoot. You would need to check Range for each model individually, but other than that the RAW have accounted for such a possibility:
Page 137: Check Line of Sight: "Normally, only models in the front rank of a unit can shoot. However, sometimes the rules will allow models in the rear ranks to shoot."
Combined with:
Page 165: Special Rules: Rule Priority: "Sometimes, special rules can seem a bit contradictory. Army special rules take precedence over universal special rules or rules associated with a model’s troop type. Unique special rules take precedence over universal special rules, army special rules or rules associated with a model’s troop type."
Meaning that the Larget Target special rule makes it so that more arrows can find their mark than on most other targets.
I believe this is to help balance out the fact that many Larget Targets are often being ridden by characters and under TOW rules the mount now provides huge benefits to the rider.
Page 204: Split Profile (Ridden Monster): 1st Bullet:"Unless noted otherwise, any special rules that apply to one element (character or mount) apply to the other as well." and 3rd Bullet: "When this model makes an Armour Save roll, it may use either the mount or the character’s armour value, whichever is better" and Same Page: Improved Characteristics: "Ridden monsters are invariably huge and fearsome beasts, and being mounted upon one will increase the character’s Toughness and/or Wounds characteristics. In such cases, this will be noted within the mount’s profile."

This is what I tried to argue to the WFB Discord, but they seem to be of the mindset that only the front rank can fire, barring the exceptions listed exclusively in the Oddball Stuff (Shooting) section. RAW, it's pretty clear the entire unit can shoot, but just be aware you may run into folks out there that may believe only the first rank can fire on Large Targets.

There are currently two rules that allow a unit to shoot with more models than the front rank, not counting Skirmishers, and that’s Shooting from a Hill and Volley Fire.
The Large Target rule doesn’t change that. Y’all are also not quoting the entire part of “Check Line of Sight Rule.”
“Normally, only models in the front rank of a unit can shoot. However, sometimes the rules will allow models in the rear ranks to shoot. In such cases, models in the rear ranks are able to see what the model at the front of their file can see”
The last sentence which has been left out in your quotes shows that there is no special rule needed for line of sight to allow models in back ranks to see their targets. What you do need is a special rule that allows models beyond the first rank to shoot.
