Do units with random movement, have to move?
And if a trebuchet is hit by the cataphonic choir spell, would it move as it’s rules say it cannot be moved during the game

Unless specified otherwise, they have to move.
BRB p. 74: "Models with Random Movement cannot declare charges, and are always moved in the Compulsory Moves sub-phase."
BRb p. 24 (Compulsory Moves): "Generally speaking, a player can move his units however he wishes within the confines of the rules governing movement. However, sometimes troops go out of control for some reason, either because they are overcome by sheer terror, because they are compelled by magic, or because they are disorientated (or just not very bright to begin with). The player has no control over the movement of such troops and so these are referred to as compulsory moves."
An exception is e.g. the Steam Tank: if you do not generate steam points, it will not move.

Regarding the trebuchet: I do not think GW has ever given a clear answer on what happens if an irresistible force meets an immovable object, other than dicing it off. However, in the particular case of the Cacophonic Choir cast on the trebuchet, I would argue that AB>BRB. While the spell is also in an AB, it does not specifically state that the target must move - it just confers the BRB special rule Random Movement. The Bretonnian AB specifically states that the trebuchet "can never be moved during the game," and thus AB>BRB applies.

The Trebuchet also has a M value of zero, so you could also argue the spell took effect, and the Trebuchet moved zero inches in a random direction...

I am afraid not. The target of the spell gains the Random Movement (D 6) special rule, superseding the original M value.
BRB p. 74: "Models with the Random Movement special rule do not have a Movement characteristic, but rather a dice roll, such as D6, 2D6 or 3D6. This is the distance they move, charge, pursue, overrun and flee — they cannot march."
But as I said, the trebuchet is subject to AB special rule, while the spell adds a conflicting BRB special rule, in which case AB>BRB.
