Herdstone has some excellent articles. My recommendations are:
Characters.
Lvl 4 with Shadow. Is often the general. The lore of shadow complements the armies weaknesses. (There are also viable combat builds using Beasts where you gain spell dice for each kill. Combine that with 2-3 lvl 1's around a herd stone using shadow and you will dominate the magic phase)
Lvl 1 Beasts as a dispel caddy for support (if your main is using shadow), otherwise run a few with shadow around a herdstone.
Minotaur Lord - Is a beast and always very good fun to use. Either standard 1+ ramhorn or flying carpet versions
Beastlord - Also viable (and as the ramhorn build). Put him in a unit of bestigors with Standard of Discipline + gold sigil sword to make him offset their always strike last weakness.
BSB - even more essential for beastmen than other armies. You need the leadership rerolls to help ensure you get primal fury. Whether you go the 206 gnarled hide build or not, the +1 str banner and putting him in a horde of AHW gor is almost mandatory.
Core
A horde of additional hand weapon Gor (backed up by the +1 Str BSB) is standard. Perhaps a supporting unit of 20 AHW Gor as this gives you some flexibility to put them in the watch tower or ambush (though Ambush is too unreliable so I wouldn't recommend it).
A couple of chariots are great. If nothing else they will divert cannons away from other targets. (and all models including the tuskgor can get primal fury)
Special
Razorgors are amazing. They can be sadly disappointing in combat but they are some of the best redirectors in the game and are really tough. I never leave home without at least 2 in my lists.
Bestigor. Also amazing. Run a minimum of 24 (6 wide by 4 deep) or better yet a horde of 40 odd.
Harpies. Not as good as Razorgor as redirectors however you can give them scout. Again I normally run 2 units of 5 and give one scout to try and get at enemy warmachines asap.
Rare
It is universally agreed that all the rare options are around 50pts too expensive. In most competitive games they are normally not fielded (though I believe there has been at least one GT win with a double Ghorgon build). I do love the Ghorgons (I have 2 Mierce Miniatures models that I use for them). They are just giant Doombulls and can cause real issues for opponents. They are also one of the few Beastmen units that can operate independently on the flanks which is gold for this army. They do suffer with no save and if you play in a cannon heavy meta then just leave them at home and add more Bestigor.
Other
It is more than viable to include other units. Minotaurs are fun and can be effective but are expensive for what you get. Razorgor chariots can be great but like a lot in 8th are cannon fodder, so taking one can depend on your meta (they are also taking points away from other options in special and you can get almost 2 standard chariots in core for the same points). Ungor raiders are also good chaff (I just prefer Razorgor or Harpies). Other Ungor I just find ineffective. Yes they can be a good tarpit unit but I always found 8th more about damage and they die too easily.
General
You need to have everything (as much as possible) within range of your general and BSB. Primal fury is so important to the army you want to maximise the chances of getting it and in general your leadership isn't brilliant (hence a general in Bestigor with banner of discipline is so recommended).

There are quite a few good options for the beastlord but below are some of my favourites. The key with him is to work out what his role will be. As lords go he is pretty well priced and has a higher strength than most comparable lords (I think it is 5).
Note I'm on my phone not near the army book so any errors are due to memory...
Armour of destiny + shield + crown of command + gold sigil sword, gives you a 4+, 4++ save, stubborn and gives you the chance of hitting first against most foes with your I10 and normally you will be rerolling to hit with you primal fury. This guy will normally sit in my Bestigor and provides the quick attacks that the unit lacks.
Heavy armour + sh + ramhorn helm + gnarled hide + brass cleavers + dawnstone (possibly something else). This is a budget version of the doombull build with a 1+ rerollable save that dishes out an additional attack for every save made. The cleavers will give an additional attack for each model in base to base contact (so he could have 8 attacks base that all reroll to hit). Put him in your main Gor unit with the +1 Str banner and he should cause issues for anything he faces.
I do as a general rule put all of my Beastmen generals in with the Bestigor as it is rare that the unit doesn't have the standard of discipline to raise the leadership by 1.

As noted I've done well with my list previously linked in this thread. Kris Kapsner did well in the US with Beastmen for several years he ran double Ghorghons I know not sure what else. He's got threads someplace on the herdstone. Google will probably pull them up.
