I have a small collection of Ogres, about 1500 points but my Dwarfs are 5000 points plus and that's without the White dwarf. I still Want to get some slayers, gyrocoptes or bombers and am now thinking about iron breakers . When do most people think it's a good idea to stop.

I don't think you should stop buy units you like to look at/paint/play with. If it's more of the same race then do that. If you would like to start new do that.

Honestly, I think it depends on what you want to do with your army(s). If you just want to play a handful of quick games once in a while, then I think you're fine. But if you are a collector (like me) or love list building (like me) and want every option available to you, then there really isn't a "cap" on how much you can add to your forces.
I, for example, have 10 armies with 6 of them over 10K points. Empire is my largest army at roughly 15K. Ogres are my newest and I'll soon have them to 3K points.

Miniature collection...too... big? I know what the words mean individually, but taken together they make no sense. On a more serious note, your collection is too big only if you have problems storing it... or if you discover you're not paying bills in favor of expanding it. If you're not to that point yet and still feel a desire to expand your collection, you don't have a problem.

Answer is never. I really like collecting minis and own more than I will probably ever paint but still continue to buy more. I really like classic metal dwarf minis and have been building up my collection of them slowly over time. My favorite way to get this stuff is off e-bay. I find searching for good deals to be great fun!

My TK and Dwarves are the largest collections, in regard to the dwarves I don't have any fire drakes as my collection is of earlier models but as long as you use the models then its fine. For example I have 2x 25 warriors, 1x 40 warriors and about 30 longbeards. I don't use all the warriors that often so wouldn't expand that part of the army. I don't see the point I collecting anything you don't ever expect to game with.

Painting is more of a personal achievement for me. I don't really care if people see them or not. It is nice getting appreciation on boards like this one though. Just from other people who understand what went into it.

It's done when you think it is.
If there's a model/unit out there that you like the looks of and you don't have it yet then by all means...get it and paint it up. If those models that you want mostly happen to fall within the same army book then all the better.
I rarely game, but that doesn't stop me from owning large collections of models; true they spend most of their time inside a tote underneath a bed in the guest bedroom, but it's fun and exciting to be able to periodically break those models out.
For me that army is WoC and it's nice to know that if I ever feel like fielding a particular type of unit or monster, I have that unit or monster painted and ready to go.
