So let's say I have a unit of archers firing at a cannon. In the middle is a gyrocopter flying.
As all can see through(as the copter is above ground), all can shoot.
For some units, the copter is in a little way of seeing the whole model. Is this light cover?
Any different if the gyrocopter is in cc with an eagle? Eagle not in the way in my case.

That is not really correct. - BRB p. 70: The flyer starts off on the ground, takes off, flies to where it wishes to go, and then lands. Flyers, therefore, begin and end their movement on the ground.
If more than half of the target unit is obscured from view by another unit (friend or foe), this counts as hard cover. Note that this depends on the view of each shooting model, not the unit as a whole.

The problem is the model itself is in the/pinned ”air” so when looking from the shooting units they can shoot below it.
So if just some parts(less then 50%) are cover(then there is no cover(shoot below/underneath it)? And yes per model.

Cannot the gyrocopter be detached from its pin? It might be that the designers of the model did not take the rules into account, but, of course, in a game the game rules override any model accessory. Otherwise, you would give flyers on pins an unfair advantage. I have seen some attempts to use modelling to exploit LoS.
Yes, you determine for each shooting model whether it can see less than half of the target. If that model sees less than half of the target, it will suffer a -2 to Hit for hard cover.

The gyrocopter is probably unpinnable, but it will most likely fall to a side and hard to make stand up without a pin.
Phoenixes on the other hand are like 1cm high and flying flat on the ground without a pin and that makes it impossible to simulated standing on ground.
But most important is we have a basic understanding, so we can just talk it out before games. So we know how to use cover and line of sight.

Turn the gyro upside down so it balances on its rotors. That should help the line of sight 😀

Ultimately this is the problem with true line of sight. I would play it as is; meaning if you can see more than 50% of the target by drawing LOS underneath the flyer, then the target behind the flier(s) is ineligible for hard cover. Any other solution is either simply guesswork or to troublesome to reliably employ consistently throughout the course of a game. Personally (the opinions of others may vary) I don't find removing model from the flying stand or flipping the model upside down as viable options. If the players are using the flying stands provided by GW, then it is fair game in my estimation.
