I'm always looking for (cheap) army books and I'm confused by Beastmen. What exactly is the latest version to use in 8th?

Skaven and beastmen and bretonnians were never updated in 8th. They use the 7th edition soft cover books.

I bought a few beastmen items within the last year and I plan to use them with my Warriors stuff in a Chaos Legion force. End Times got some things wrong but I really like the combined undead and chaos forces. They remind me of when I started playing Warhammer and it was possible to mix, for example, demons, warriors, and beasts in an army.

I have about 40 plastic (old school 1 piece) Beastmen Gors. The halberd ones. + 5 all-metal multi-part Minotaurs, PLUS the huge size Minotaur Lord. + about 10 loose Ungors, Bestigor command models, and others.
I don't think I'll ever paint these. Want to trade?

The 7th Edition softback is the 'current' 8th Edition Beastmen rulebook. Beastmen aren't considered powerful in 8th but in 8th they can give any army a bloody nose whereas in 7th they struggled. Bsb rerolls for primal fury make a big difference as does stepup for bestigor and the like. Stomps help minotaurs as well. Another reason why 8th is awesome. The Glottkin book brought back marks so i can field Khornegor again

If I remember correctly, the Beastman book was the last army book for 7th edition (either that or Skaven?). It was clearly written with 8th edition in mind.
However, the problem it suffered from is that the main writer left GW before it was complete and another games designer finished it. As others stated, the Glottkin book does help/fix the Beastmen by allowing them to take marks of chaos.
Either way they are a fun and cool army.

Yes the last Beastmen book was written with 8th in mind and was the last before 8th dropped. It's a fun army to use and what I played for most of 8th. There are two ways to go about it - big bricks of nasty combat troops/minotaurs and monsters or full on MSU. I am actually more of a fan of MSU beastmen. No, they were terrible compared to most MI. But a mino bus with characters was pretty fun.
