I thought it'd be nice to have a thread where people can pose a question to the community and gauge the responses as to what they'd prefer to build, if given an option. There's quite a few of these, so make the question simple, but if you're answering, quote the question to keep track of which you're referring to. I'll start off.

I think it was sedge who gave me the idea of building the model as a bit of both, by giving it the Cygor head and top two arms, alongside the two bottom arms of the Ghorgon, to make a CyGhorgon  , so one can use it as either depending on the foe you're facing. Regarding which one to actually use, it depends on whether a Stone Thrower is useful against the opponent in question - if so, the Cygor will come in handy as a Stone Thrower that's virtually unkillable by normal war machine hunting units, otherwise go with the Ghorgon for combat clout.

Beastmen: Ghorgon or Cygor? Ghorgon - what’s not to love about a giant, over the top, Minotaur! One is good, two is better! Sprinkle in a topping of Doombull and I have a happy themed list.

Cygor for me. Beastmen have barely any shooting and bringing along a stone thrower is always good for a list. While his wizard shenanigans almost never work it can be fun when it does

Longbeards.
Definitely some of the best core in the whole game. Immune to panic, plus you know they're the dwarfs with the longest beard, making them automatically the best dwarfs.
Ironbreakers on the other hand, are some of the most underwhelming dwarf unit; for what's supposed to be the best armoured unit in the game they don't even have 2+.
Which just begs the question of why the supposedly best armoured army in the game has no unit with 2+ armour
Virtually any army with heavy cavalry has better armour than dwarfs.

I had a "LOngbeard Army" in 6th Ed, those wonderful then new models, 2x 25 plus that Ltd Ed BSB.. I never owned Iron Breakers.. becuase every one else did.. I wanted to be different..  I loved those Longbeards, often did not use Warriros 8Thunderers and Crossbowmen for Core).. So.. Longbeards all the way. one of the things I really miss.. Along with the 5th Ed cannon - allwar machines hybrid metal-plastics from 5th Ed/7th Ed.. So - Longbeards all the way! I don´t care if ironbreakers are "better".. You got the 4th Ed Longbeards i guess?

To keep it going: long beards or ironbreakers? As much as I like Ironbreakers for their models and background: Longbeards are just even better with both. Longbeards are also the archetypical WHF dwarf.
